Berry Chia Seed Pudding

Ingredients:

3 tbsp chia seeds
1 cup almond milk (or milk of choice)
1 tsp vanilla extract
1–2 tsp maple syrup or honey (optional, to taste)
½ cup mixed berries (fresh or frozen; blueberries, raspberries, strawberries)
Optional toppings: extra berries, coconut flakes, cacao nibs, pumpkin seeds

Instructions:


1. In a bowl or jar, combine chia seeds, almond milk, vanilla, and maple syrup. Stir well.
2. Let it sit for 5 minutes, then stir again to prevent clumping.
3. Cover and refrigerate for at least 2 hours, preferably overnight, until thickened.
4. When ready to serve, top with mixed berries and optional toppings.
5. Optional twist: layer with Greek yogurt for extra creaminess and protein.
