Banana Oat Cookies
Ingredients:
2 ripe bananas
1 cup rolled oats
2 tbsp dark chocolate chips or cacao nibs (optional)
Optional add-ins: 1 tsp cinnamon, 1 tsp vanilla extract, 1 tbsp chia seeds, or 1 tbsp nut butter
Instructions:
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- Mash the bananas in a bowl until smooth.
- Stir in the oats and optional add-ins (chocolate chips, cinnamon, vanilla, chia, nut butter).
- Scoop spoonfuls onto the baking tray and flatten slightly with a fork.
- Bake for 12–15 minutes, until lightly golden and firm to touch.
- Cool for a few minutes, then enjoy warm or store in an airtight container for up to 3 days.
