Crispy Baked Salmon with Mashed Potatoes and Asparagus
Ingredients:
4 Salmon fillets (skin on is best)
1 tbsp Olive oil
4 Large potatoes, peeled, sliced and boiled
2 tbsp butter
1/4 cup milk or cream
1 Bunch asparagus, trimmed and roasted
Instructions:
- Preheat the oven to 375°F
- Rub the salmon fillets with olive oil, salt and pepper. Place them skin side down on a baking sheet lined with parchment paper.
- Roast the salmon in the oven for about 15-20 minutes, or until flaky.
- Meanwhile, mash the boiled potatoes with milk, slowly adding it in as needed, then again slowly adding the butter in as needed. Once mashed add the salt and pepper, stirring it in and tasting as you go.
- Roast the asparagus in the oven at 375°F for 10-12 minutes until tender, or sauté in olive oil if you prefer.
- Serve the salmon with mashed potatoes and roasted asparagus. (Garnished with lemon and parsley, if you like).
